What Is Early Harvest Oil?
When olives collected from the olive tree are pressed in different periods, olive oils of different flavors are obtained.
The oils obtained from olives collected in the early period of the harvest period, that is, when the olive fruit is greener, is called early harvest olive oil.
In early harvest olive oils, the amount of olives used to obtain 1 liter of oil is approximately 7-8 kg, whereas this ratio is around 4-5 kg in olive oil obtained from mature harvest, that is, black olives.
Early harvest olive oil costs more than mature harvest olive oil, but the quality of the early harvest olive oil is much better.
The aroma and smell of early harvest olive oil is more reminiscent of green fruits and its pungency is higher.
